 Broccoli Salad Supreme


This cold salad is a great potluck dish. The proportions are generous (serves 20), but you could easily divide it by half for a smaller group or family.  There are quite a few variations of this salad - you can 'google' the ingredients and get the links.  The ingredients in this particular recipe are:

Broccoli florets
Bacon
Seedless grapes (red makes for a nice color contrast)
Green onions (scallions)
Celery
Slivered almonds
Mayonnaise
Cider Vinegar
Sugar

Cook's notes:
  • The only change I made to the recipe was to cut the sugar in half (from 2/3 cup to 1/3 cup). With the grapes adding their own sweetness, all of the sugar just wasn't necessary.
  • Make the dressing well enough ahead that the sugar dissolves, otherwise you will have a 'gritty' dressing. A couple of hours should do it.
  • This is an easy make ahead salad. There is some washing, drying and chopping involved, plus frying the bacon (unless you use the pre-cooked) and you can do this a day or two ahead or early in the day of your event.
