Bulgur-Quinoa-Couscous Salad

Couscous & bulghur - Bob K.
Bulgur-Quinoa-Couscous Salad

I kept hearing comments about this salad, brought by Bob K., the most frequent being "what is in this salad? It's SO good!"  Be mystified no longer - Bob has graciously shared the recipe:

Ingredients:
  • 3-1/2 cups water (boiling)
  • 1 bouillon cube
  • 1 cup bulgur (note 1)
  • 1 cup quinoa (note 2)
  • 1/2 cup total of assorted dried fruits (raisins, cranberries, currents, cherries, etc.)
  • 1/2 cup couscous (note 3)

Instructions:

Boil 3 1/2 cups water with one bouillon cube.
Add one cup bulgur and one cup quinoa, and simmer fifteen minutes.
Add 1/2 cup total of assorted dried fruits
Add up to 1/2 cup couscous to absorb any extra moisture.
Let stand a few minutes, then fluff with a fork.
You can reduce the proportions to make less. It also keeps well, and can be microwaved to reheat.

Cook's Note from Bob:
I get almost everything from the The Cheese Shop in Stuarts Draft, which sells these items, like quinoa, bulgur, couscous, and dried fruits in bulk - but small packages, often no larger than a tennis ball. (Good source for making trail mix, too.)

Notes 1-3:
Never heard of bulgur and/or quinoa before? You've heard of 'couscous', but exactly what is it?  This recipe is not only 'tasty' but 'educational' as well, so here 'ya go:

Note 1:  Bulgur (from Wikipedia)

Note 2: Quinoa (from Wikepedia)

Note 3: Couscous (from Wikipedia)
